The Pig & The Lady is what happens when a chef respects a tradition and then rewires it. Andrew Le's pho is his mother's recipe — Mama Le's broth simmers all day, and you can taste the difference in five-spice clarity. The Pho French Dip is the photo on Instagram, but the L.F.C. fried chicken is what locals reorder. Service is bright and fast, the room hums, the cocktails (lemongrass margarita, off-menu) keep up.
